FRESH PEACH COBBLER 
3 cups sliced peeled peaches
1 cup sugar
1 tsp. cornstarch
1/4 tsp. almond extract

Shortcake Dough:

1 1/2 cups sifted all-purpose flour
3 tsp. baking powder
1/4 cup sugar
1/2 cup shortening (Crisco)
1 egg
1/2 cup milk

Preheat oven to 400°F.

Arrange peaches in 8x8-inch pan. Cover with sugar, cornstarch and almond extract.

Mix dough ingredients using biscuit method (mix dry ingredients, cut in shortening and pour in liquids then lightly toss together - do not knead or overmix). Drop shortcake dough by spoonful on top of peaches, sprinkle top with additional sugar.

Bake at 400°F for 25 to 30 minutes.

Variation: Apples may be substituted. Use 2 cups peeled diced apples with brown sugar instead of white, 1/2 teaspoon cinnamon and 1/2 teaspoon nutmeg (optional).

Good served with cream, ice cream or just plain.
