PECAN FRUIT MUFFINS 
3 whole eggs
3/4 c. sugar
3 tbsp. flour, level
1 tsp. vanilla
1 c. chopped dates
1/2 c. raisins
1 c. chopped nuts

Mix sugar and flour, then fold in the chopped dates, nuts and raisins to coat well. Mix eggs slightly and vanilla and fold in dry ingredients. Grease and flour small muffins. Bake 40 minutes at 275 degrees. Makes 24 muffins.
