OAT BRAN FRUIT MUFFINS 
1 lb. Oat Bran, dry
2 tbsp. baking powder
1 c. brown sugar
1/2 tsp. cinnamon
4 egg whites
2 tbsp. oil
1/2-2 c. (skim milk) or raisins, peaches, etc.

I usually add 2 cups fruit (applesauce, 1 cup something else) plus milk. Bake at 425 degrees for 10-18 minutes. Yield 24 muffins.
