POST FRUIT & FIBER CEREAL BRAN
MUFFINS
 
1 cup all-purpose flour
1/3 cup light brown sugar, packed
1 tbsp. baking powder
1/2 tsp. salt
2 1/2 cups Fruit & Fiber cereal with dates, raisins & nuts
1 cup milk
1 egg
1/3 cup oil

Mix dry ingredients. Combine cereal and milk in bowl and let stand 3 minutes. Stir well. Add egg and oil; blend well. Add flour mixture and mix just enough to moisten flour (batter will be thick). Fill greased muffin pans 3/4 full.

Bake at 400°F for 25 minutes or until golden brown.

Makes 12.

Made this recipe using apple and olive oil for the 1/3 cup of oil required. Also used dried cherries for the fruit and no nuts. They are delicious!

Made these all the time in my teens. Perfect to cook ahead so that breakfast could be had quickly before school.

Mom worked so I was on my own. Had been clinging to the recipe cut off the back of a box of Fruit & Fiber back in the 80s and used Post Great Grains to make it. Lost the recipe when our home was destroyed by a tornado in 2020 and stumbled on this today! So glad to have found it!
