PEACH COBBLER 
6 c. fresh peaches, sliced and 1/2 c. peach nectar
1 c. oatmeal
1/3 c. ground pecans
1/4 c. (brown rice) flour
1 tsp. cinnamon
1/4 c. maple syrup
1/4 c. raisins

Butter a pie plate; cover the bottom with the peaches and nectar. Combine the rest of ingredients and mix well; sprinkle on the peaches. Dot with butter, if desired, and bake at 375 degrees for 20 to 25 minutes or until peaches are soft. Serve with almond cream or lowfat vanilla ice cream.
