FRUIT AND BRAN MUFFINS 
1 (15 oz.) box Raisin Bran
2 c. raisins
8 Granny Smith apples, chopped
5 c. plain flour
3 c. sugar
4 tsp. vanilla
5 tsp. baking soda
2 tsp. salt
4 eggs, beaten
1 c. oil
1 qt. buttermilk
8 tsp. cinnamon

Sift all dry ingredients (flour, sugar, soda, salt, and cinnamon) together. Add buttermilk and mix; mix in oil. Add eggs and vanilla and mix. Mix in apples, raisins, and cereal with mixer.

Spray muffin pans with Pam and fill pans 3/4 full for large muffins. Bake at 350 degrees for 20 minutes. May keep mix in refrigerator for up to six weeks. May need to add milk to mix periodically to maintain proper consistency.
