FRUIT AND NUT BRAN MUFFINS 
2 tbsp. Butter Buds
3 tbsp. apple juice concentrate
2 egg whites
3/4 c. rice milk
1 c. bran
1 c. whole wheat flour
2 tsp. baking powder
1 c. chopped cashews
3/4 c. raisins

Preheat oven to 425 degrees. In a large bowl, mix Butter Buds, apple juice concentrate, and egg whites. Add rice milk and bran. Stir. Add flour and baking powder; stir. Quickly fold in nuts and raisins. Fill muffin pans sprayed with Pam 2/3 full. Bake 20 minutes. 12 muffins.
