HEALTH WISE BRAN AND FRUIT
MUFFINS
 
1/2 c. flour
1/2 c. bran or All Bran cereal
1 tbsp. sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
1 egg
1/2 c. skim milk
1/2 c. blueberries or diced fruit

Combine flour, bran, sugar, baking powder and salt in a small bowl. Combine egg and milk. Stir fruit into flour mixture. Then stir in liquid ingredients, just until blended. Fill greased muffin tins 2/3 full of batter. Bake at 400 degrees for 15 to 20 minutes, until lightly browned. Makes 6 muffins.
