“RICH CORN BREAD” IS IN:

RICH CORN BREAD 
3/4 cup yellow corn meal
1 cup flour
1/3 cup sugar
3/4 teaspoon salt
1 teaspoon baking soda
2 teaspoons cream of tartar or Bakewell Cream
1 egg, well beaten
1 cup sour cream, yogurt or buttermilk
1 cup milk
2 tablespoons butter or shortening, melted

Preheat oven to 425°F. Grease an 8-inch square baking pan.

In a mixing bowl, stir together the dry ingredients until well combined.

Beat the egg; combine with remaining liquids and melted shortening. Stir gradually into dry mixture.

Bake for 20 minutes or until lightly golden brown on top.

This recipe tastes great, I substituted "Maseca" Masa de Maiz, (corn meal) and used 4 egg yolks instead of just one egg, but the results were amazing, and the kids loved it.

Wonderful recipe. Great flavor and consistency. I didn't have the cream of tartar, but the results were perfect anyway. I used local stone ground corn meal. I'll do this one again! Thanks, CM

Made this for the first time tonight and love it. It is rich as the name says, but a very nice change from traditional cornbread. I cut a slice of it, took a bite and then took it to my wife to try. Her exact words were, "OMG, this is the best cornbread I have ever had." Saving this recipe!

This was the best corn bread I've ever made or tasted. It was very light, rich and delicious. I only used 1 cup of a combo of yogurt, cream and water- not 2 cups. I also used 3 tsps. of baking powder and no cream of tartar or Bakewell Cream
