“CINNAMON APPLE MUFFINS” IS IN:
NEXT RECIPE:  CORN MUFFINS

CINNAMON APPLE MUFFINS 
1 1/2 cups flour
3/4 cup sugar
1 1/2 tsp. baking powder
1 t. cinnamon
1/2 cup milk
1/3 cup butter, melted*
1 egg, slightly beaten
1 cup finely chopped apples

Heat oven to 375°F.

Combine flour, sugar, baking powder and cinnamon in medium bowl. Add all remaining ingredients. Stir just until flour is moistened. Spoon batter into muffin liners.

Bake 18-23 minutes. Let stand 5 minutes.

* Substitute butter with Canola Oil.

Fine recipe we found when looking for recipe to use the pulp from our juicer. We used this recipe as is, using the pulp from a juicer instead of diced apples (we used about 2 small bags of apples that were cored and one pomegranate's arils). We doubled the fruit content and the recipe. The result was a tasty and dense fruit bar'ish mufffin which was very moist and apple tasting. We will use again.

Pretty good but a little bland. Next time I may substitute half brown sugar instead of all white and also add some vanilla. The texture of these muffins is really nice and soft. I used the oil instead of the margarine and I am going to try the margarine next time.

The blandness was from the lack of salt. Salt brings out the flavor of everything else. I added 1/2 tsp of salt and the family loved them!

I thought this recipe was a little bland. I tried using half brown sugar like someone else suggested but I have made better tasting muffins before. The texture was very good but the batter could have been a little sweeter.

I love these muffins! They are moist, tasty and so easy to make! I added a cinnamon brown sugar crunch topping which was really easy and gave the muffins some colour and extra cinnamon taste (but they would have been good even without it)! Try this recipe if you are looking for a fast, delicious treat for breakfast or for a snack!
