“CINNAMON APPLE MUFFINS” IS IN:
NEXT RECIPE:  CORN MUFFINS

CINNAMON APPLE MUFFINS 
1 1/2 cups flour
3/4 cup sugar
1 1/2 tsp. baking powder
1 t. cinnamon
1/2 cup milk
1/3 cup butter, melted*
1 egg, slightly beaten
1 cup finely chopped apples

Heat oven to 375°F.

Combine flour, sugar, baking powder and cinnamon in medium bowl. Add all remaining ingredients. Stir just until flour is moistened. Spoon batter into muffin liners.

Bake 18-23 minutes. Let stand 5 minutes.

* Substitute butter with Canola Oil.

I modified it some with cinnamon sugar, apple pie spice, extra apples and chopped pecans. Baked for 19 minutes. Then topped with some honey and powdered sugar for some added sweetness. Baked for an additional 19 minutes. They didn't rise much, but were tasty.

I loved the recipe, except I definitely added brown sugar to the ingredient content. I also sprinkled some on top right before putting them in the oven.
