COUNTRY STYLE POTATO SALAD 
8 or 10 potatoes
2 boiled eggs (diced)
1 1/2 tablespoons prepared mustard
3 sweet pickles (diced)
1 large sweet onion (diced)
one cup of Miracle Whip
1 teaspoon salt

Peel and rinse the potatoes, dice, and boil them until they are fairly tender. Rinse off the hot water and add the first four ingredients.

Add a teaspoon of salt (or to taste) and a cup of Miracle Whip. Stir gently so as not to mash the potatoes. Add a dash of paprika on top. Cover and refrigerate until ready to serve.

This one comes closest to how my mom made her potato salad, simple and with fewer ingredients. Mom liked Miracle Whip, but I use mayo. Turned out great, thank you!
