PINEAPPLE MUFFINS 
This recipe was given to me by a good friend. It has become a family favorite!

2 cups all-purpose flour
2 cups sugar
1 tsp. salt
2 tsp. baking powder
3 eggs
1 (15 oz.) can crushed pineapple (do not drain)
3/4 cup vegetable oil

Mix together flour, sugar, salt and baking powder. Add the eggs, crushed pineapple and oil. Mix well. Put paper muffin cups in muffin pan. Fill about 2/3 full in the muffin cups.

Bake in 400°F oven for 25 to 30 minutes until light, golden brown.

Makes 2 dozen.
