MEXICAN VILLA ENCHILADA SAUCE
CLONE
 
1 1/2 sticks butter (no substitutes)
9 heaping tablespoons flour (more as needed)
6 cups water
7-8 good quality beef bouillon cubes
1 1/2 packets Williams Original Chili Seasoning

Here's my friend's "Mexican Villa Burrito Enchilada Style" copycat sauce recipe from Springfield, MO!

In a large skillet on low heat, mix:

1 1/2 sticks real butter
9 heaping tablespoons flour

Make a roux from this, stirring occasionally, do NOT brown, if too runny, add a little more flour.

In a large pot combine:

6 cups water
7-8 good quality beef bouillon cubes.

Bring this mixture to a boil, then add:

1 1/2 packets Williams Original Chili Seasoning

Add this liquid combo to the cooked flour combo, stirring till smooth. Make enchiladas with mashed refried beans; boiled, drained ground beef seasoned with packet of Taco Bell powder and a little of this sauce and shredded Kraft White American cheese. Pour sauce over all and bake about 30 minutes at 350°F.

My husband and I used to go to Mexican Villa at least once a week when we were going to SMSU in the 1970's. We still go there in the summer after all these years -- it is soo good. This really is delicious and tastes just like MV! Any idea how they make their wicked hot sauce? LOVE IT!

This is pretty much what I make. My sister worked for Mexican Villa for years and the dry ingredients came in a bag and were added to the butter/margarine/oil not sure which. I use butter and I add a little oil,keeps it from congealing so quickly. I made it with the Williams mix this week but usually I use cheapie chili powder and am happy with that. Also some salt and pepper. In recent years I bought a southwestern cookbook and discovered that this is called Chili Gravy.

This is for Tricia (Missouri) for the cheese dip just add white american cheese to the sauce and you have the Mexican Villa cheese dip. I am not sure on how much. I just eyeball it until it looks good and tastes good!!!

Mexican Villa has been my all time favorite place to eat since I was 12 years old. Never get tired of it.
I made this recipe and it was soooo close. This is the way I will make it from now on.
Someone please tell me what is in the mild sweet sauce. I dream about that delicious stuff.

Villa is one of my favorite restaurants in Springfield. Here is a post I found on the net on another site -- I made this sweet sauce and it is great!! It turned out a little thick, so just add water until it is the consistency you want.

This is my take on their sweet sauce and my husband and I think it's pretty close. It has all the ingredients that are listed on their bottle, except the MSG, which I think we are better off without.

Ingredients:

1 can (28 oz) crushed tomatoes
2 jalapenos (you can use canned jalapenos also)
2 tsp. salt
1/2 c. white vinegar
1 c. sugar
2 1/2 c. water

Directions: Puree tomatoes and jalapenos together. Combine rest of ingredients in saucepan and simmer for 10-15 minutes. Chill for best flavor (the vinegar will be too strong while it is warm).

I believe their cheese sauce (Queso) is just white American cheese and their enchilada sauce mixed half and half. At least that tastes right to me.
