MEXICAN VILLA ENCHILADA SAUCE

1 1/2 sticks butter (no substitutes)
9 heaping tablespoons flour (more as needed)
6 cups water
7-8 good quality beef bouillon cubes
1 1/2 packets Williams Original Chili Seasoning

Here's my friend's "Mexican Villa Burrito Enchilada Style" copycat sauce recipe from Springfield, MO!

In a large skillet on low heat, mix:

1 1/2 sticks real butter
9 heaping tablespoons flour

Make a roux from this, stirring occasionally, do NOT brown, if too runny, add a little more flour.

In a large pot combine:

6 cups water
7-8 good quality beef bouillon cubes.

Bring this mixture to a boil, then add:

1 1/2 packets Williams Original Chili Seasoning

Add this liquid combo to the cooked flour combo, stirring till smooth. Make enchiladas with mashed refried beans; boiled, drained ground beef seasoned with packet of Taco Bell powder and a little of this sauce and shredded Kraft White American cheese. Pour sauce over all and bake about 30 minutes at 350°F.

I know this is good because my daughter makes it and she ate at Mexican Villa all the time when she was going to college at SBU she loved this restaurant. My question why not just use Beef Broth instead of water and bouillon cubes.

Just wanted to add when turning this to a cheese dip/sauce... You can use Yellow or Cheddar American cheese. I usually just use the singles, it tastes just the same just a more yellow/orange color. Either way, it's delicious!
