BASQUE TOMATO SALAD | |
fresh Roma tomatoes 1 green sweet pepper (bell pepper) 1 sweet onion Dressing: 1/2 cup olive oil 1/2 cup cider vinegar 1 tsp. salt 1 tsp. sugar 1 tsp. coarsely ground black pepper 2 tsp. chopped parsley 1 tbsp. minced garlic Halve or quarter tomatoes and arrange in shallow refrigerator dish. Slice onion into thin slices and arrange on top of tomatoes. Slice green pepper into thin rings and arrange on onions. Combine dressing ingredients in jar and shake vigorously. Pour dressing over the tomatoes, onions and peppers. Cover and refrigerate at least 2 hours. Submitted by: T. Hall |
