BASQUE POTATO SOUP | |
1 lb. or more Italian sausage 4 small potatoes, peeled and diced 2 tbsp. celery leaves 2 beef bouillon cubes salt to taste 1/4 tsp. pepper 1/2 c. chopped onion 2 cans diced tomatoes (with Italian seasoning) 1/4 c. chopped parsley 1 c. sliced celery 1 1/2 c. water 1 medium bay leaf 1 tsp. thyme 1 tbsp. lemon juice Brown sausage with onions and drain. Combine all ingredients. Cook until potatoes are tender. |
