ZUCCHINI BRAN MUFFINS 
1 1/2 cups whole-wheat flour or enriched all-purpose flour
1 1/2 cups bran
1/2 tsp. salt
3 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 cup chopped walnuts
1/2 cup raisins
2 eggs
1/4 cup salad oil
1/3 cup molasses or maple syrup
1 1/4 cups milk
1 tbsp. cider vinegar
1 cup shredded zucchini

Grease muffin pans and preheat oven to 375°F.

Combine flour, bran and the next 6 ingredients in a large bowl; set aside.

In a medium bowl, beat eggs slightly; add oil, molasses or maple syrup and the next 3 ingredients. Add the zucchini mixture all at once to the dry ingredients; stir just until dry ingredients are moistened.

Bake muffins at 375°F for 15 to 20 minutes, until toothpick inserted in center comes out clean.

Makes about 25 (2-inch) muffins.
