ZUCCHINI GEMS (MUFFINS) | |
3/4 c. flour 1/4 tsp. each baking powder, baking soda, salt & nutmeg 1 egg 1/2 c. sugar 1/4 c. vegetable oil 1/4 c. each raisins, snipped fine & walnuts, chopped med. fine 1 c. grated fine zucchini, loosely packed Stir together flour, baking powder, baking soda, salt and nutmeg. Beat together egg, sugar and oil until blended. Add flour mixture to egg mixture. Fold in zucchini, raisins and walnuts. Stir only until dry ingredients are moistened. Fill greased muffin pan cups each 2/3 full. Bake in 350 degree oven until cake tester inserted in center comes out clean, about 25 minutes. Makes 8 muffins. |
