ZUCCHINI MUFFINS 
3 c. flour
1 tsp. salt
4 eggs
1 tsp. baking powder
1 tsp. cinnamon
1 c. oil
1 tsp. baking soda
2 c. sugar
2 c. grated unpeeled zucchini
1/2 tsp. vanilla
1 c. chopped walnuts
1/2 c. golden raisins, optional

Bake at 350 degrees for 25 minutes or lightly browned. Generously grease muffin tins. Sift flour, baking powder, salt, soda and cinnamon. Combine sugar and eggs in large mixer bowl. Beat at medium speed 2 minutes. Add oil in slow steady stream, beating constantly 2-3 minutes. Blend in zucchini and vanilla. Stir in nuts and raisins. Fold in dry ingredients until baller is evenly moist. Do not over mix. Spoon batter into muffin tins 23/3 full. Bake. Remove and let cool on rack.
