MEMAMA'S STRAWBERRY CREAM CHEESE
SALAD
 
My Memama, Nancy Ruth Rushin, used to make this on special occasions and it is the only jello mold I love to eat.

3/4 cup orange juice
1 (3 oz.) pkg. strawberry jello
2 (10 oz. ea.) boxes frozen sweetened strawberries
1/2 (8 oz.) pkg. cream cheese, softened
3/4 cup Coca Cola

Drain frozen strawberries reserving juice. Put reserved strawberry juice, Coca Cola, and orange juice into a pot and heat on medium temperature. When heated stir in the box of strawberry Jello. Whisk cream cheese into Jello mixture until completely blended.

Note: There will still be small dots of cream cheese that can't be completely blended (Memama and I tried and tried to get rid of these to no avail).

Stir in reserved frozen strawberries. Put the Jello salad mixture into either a casserole dish or a Jello mold. I use my mama's mold that has a removable top that leaves a heart impression.

To serve in the casserole dish you can leave it plain or add either dairy sour cream on top or whipped cream.

Be creative and make a design using spray whipped cream if desired. I fill in the heart on top of mine with fresh whipped cream and then more around the base of the mold.
