BANANA-BLUEBERRY BREAD | |
![]() 1/2 cup (1 stick) butter 1 cup sugar 2 eggs 1 cup mashed ripe bananas 1 cup frozen blueberries 1 1/2 cups all-purpose flour 1 tsp. vanilla 1 tsp. baking soda 1/4 tsp. salt 1/2 cup quick cooking oats 1/2 cup nuts (optional) Preheat oven to 325°F degrees. Grease and flour 2 loaf pans. Cream together butter and sugar. Beat in eggs. Add mashed bananas. Measure flour, reserving 2 tablespoons of flour to coat blueberries. Stir baking soda and salt into flour, mixing well. Stir in oats. Fold into banana mixture. Stir in vanilla. Sprinkle the 2 tablespoons flour over blueberries, then fold into batter. Stir in nuts. Transfer batter to loaf pans. Bake at 325°F for about 50 minutes. Submitted by: CM |

This recipe in it's original form I am sure is as delicious as the way mine turned out. I appreciate that it calls for only one cup of blueberries and one banana. More commonly I have this on hand. Thank you for posting it!
