BANANA-BLUEBERRY-NUT BREAD | |
2 cups sifted flour 1 tbsp. baking powder 1/2 cup quick-cooking oats 3/4 cup chopped walnuts 1/2 cup milk 1 cup mashed ripe banana (about 3 medium) 3/4 cup sugar 1/2 tsp. salt 1/3 cup butter or shortening 1/2 tsp. vanilla 1 egg 1 cup fresh blueberries Preheat oven to 325°F degrees. Grease and flour 2 loaf pans. Cream together butter and sugar. Beat in eggs. Add milk and mashed bananas. Measure flour, reserving 2 tablespoons of flour to coat blueberries. Stir baking powder and salt into flour, mixing well. Stir in oats. Fold into banana mixture. Stir in vanilla. Sprinkle the 2 tablespoons flour over blueberries, then fold into batter. Stir in chopped nuts. Transfer batter to loaf pans. Bake about 50 minutes. Note: This recipe can be prepared easily using a food processor. An advantage to this method is that the oats can be processed into a fine flour before adding the other ingredients, and the bananas won't need to be mashed by hand. Stir in the blueberries and nuts (with a spoon) as the last step and do not process. |
