FINNISH LIMPPU BREAD 
3 1/2 c. boiling water
1/2 c. dark molasses
4 c. rye flour
1 tbsp. salt
1 pkg. dry yeast
1/2 c. warm water
4-5 c. white flour

Mix 1 1/2 cups boiling water with molasses and 1 cup rye flour. Beat well. Let stand 30 minutes. Beat in 1 cup rye flour and 1 1/2 cups boiling water. Let stand 1 hour. Add 1/2 cup boiling water and beat. Stir in salt.

Dissolve yeast in 1/2 cup warm water and add to flour mixture. Slowly add the remaining 2 cups rye and the white flour. Let rest in bowl 15 minutes. Knead 8-10 minutes. Let rise until doubled. Form into 3 loaves and let rise until almost doubled. Bake at 375 degrees for 45-50 minutes. Glaze the loaves while hot.

GLAZE:

1 tbsp. molasses
1 tbsp. warm water

Wonderful, easy method flavourful bread. My mom was Finnish and never had a formal recipe for a very similar bread. She went by feel as she made it. No accurate measurements. Sometimes when I made it, it turned out heavy. Used this recipe 3 times and delicious perfect bread every time :)
