NEXT RECIPE:  PECAN PIE BARS

PASTA CARBONARA
1/4 lb. bacon (about 4 slices)
1/2 cup (1 stick) butter
1 cup milk
2 tbsp. wine vinegar
1 (1 lb.) box pasta (fettuccine or linguine)
2 eggs, whipped
1/2 cup fresh Parmesan cheese

Cut the bacon into little pieces and cook in butter until clear. Heat milk in a small saucepan, and add the bacon and butter, add the vinegar; this will turn the milk to cheese. Simmer for about 15 minutes, or until the sauce cooks smooth.

Boil the pasta al dente. Drain and return to pan. Immediately throw in the eggs, the bacon sauce and cheese. Toss and serve. Add salt and pepper to taste.

Baby peas in butter and just a sprinkle of oregano to accent and lift the taste. As an add on, slowly grill a chicken breast. Slice and add to sauce.

Substitute fresh lemon juice for the wine vinegar - and add 1 large, crushed clove of garlic. It is fantastic! This recipe was very easy to prepare. I tried it out on my 13 year old son - he loved it.
