“PECAN PIE BARS” IS IN:

PECAN PIE BARS
This is my substitute for pecan pie!

CRUST:

1/4 cup sugar
1/2 cup (1 stick) butter
1 tsp. vanilla
1 egg
1 1/2 cups all-purpose flour

Mix sugar, butter, vanilla and egg. Stir in flour. Mix well. Press dough in the bottom and 1/2-inch up sides of ungreased 9x13-inch pan. Flour fingers if dough is too sticky.

Bake at 350°F for 10 to 15 minutes or until edges are browned.

PECAN LAYER:

1/4 cup brown sugar, packed
1/4 cup corn syrup (Karo)
1 tsp. vanilla
2 eggs
1 cup broken pecans

Combine brown sugar, corn syrup, vanilla and eggs. Beat well. Stir in pecans. Pour over crust.

Bake at 350°F for 25 to 30 minutes or until set. Loosen edges from side of pan while warm. Cool completely. Cut in bars. Cover and refrigerate bars.

This was really easy and so so good... I took a bunch to my last softball game and were a big hit after... Thanx :-)

it was great but if you melt some butter and brown sugar together and put it on after as a glaze it is even better, but more fatning

This was really good and easy. I just substituted the the crust for a store bought graham cracker crust then added melted butter on the crust and then poured the filling in. It so was delicious. Thanks!
