MY LITTLE HOUSE ON THE PRAIRIE
CINNAMON CHICKEN
 
This is my take on what would have been used "on the prarie"... butter churned, chickens raised, honey collected, and cinnamon was a common "exotic" spice for many recipes of the time... Enjoy!

Cornish game hens, split
honey mixed with butter, add cinnamon

Put the game hens in a 350°F oven. As soon as they are hot enough to melt butter, put a generous amount of honey, butter and cinnamon mix all over the skins of the hens. Bake hens for the time specified on the package.

Repeat basting... skin will be blackened but sweet and tasty when done.

... Of course, Laura Ingalls used tons of black pepper, but she was getting back at Nellie for having eyes on Alonzo -- who could blame her??!!
