EASIEST & BEST HOMEMADE ALFREDO
SAUCE
 
This by far is the easiest and best Alfredo sauce recipe I have found yet! I love pasta and Alfredo and searched forever to make it homemade. I think that too many recipes have too many ingredients and that others are too watery. My girlfriend loves it and makes me cook it at least once a week.. plus you can add it to so many different things! This is a great, simple recipe to make for someone coming over for a dinner date ;)

1/2 cup (1 stick) butter
1 (8 oz.) pkg. cream cheese
1 cup half and half
1/3 cup Parmesan cheese
1 tablespoon garlic powder (optional)
pepper, to taste

1. In a medium saucepan, melt butter.

2. Once butter is almost melted, add the package of cream cheese. It's easiest to cut it into 4 pieces so that it melts quicker.

3. Once butter and cream cheese are mixed well together, add the cup of half and half, Parmesan cheese, garlic powder, and then shake pepper on top. Stir all together until well mixed.

4. Once it's mixed well and sauce-like, take it off the burner and set aside so it can thicken up. Stir every few moments.

5. DONE! Pour over your favorite pasta, I love it with tortellini!

Don't forget some bread-sticks to dip in the extra sauce! :)

My 11 yr. old prepared this for bow-tie pasta for our guests! Everyone loved it! Only used 1/2 of the garlic suggestion. Also, used optional capers and lemon juice on the side.

This recipe saved me when I wanted a creamy sauce for my garden pasta. I put fresh minced garlic in with the butter and also used 2% milk because I was all I had on hand. It was delicious! Dont tell my husband it had cream cheese, though. He claims he hates it but had seconds to this pasta dish. Thanks!!

I was a little skeptical about using cream cheese for an Alfredo sauce recipe. I sat there staring at this for awhile and went to go try it. I even stared at my cream cheese for some time thinking really? In Alfredo sauce? I went for it and made it. Oh wow this is truly delicious. I would recommend to lighten up on the garlic going with a 1/2 tablespoon instead of 1 tablespoon. Start with the lower measurement and if you want more add more! Garlic powder is more stronger I think than fresh minced garlic. I love garlic, but it kind of washes out the over all flavor of Alfredo sauce using the 1 tablespoon measurement, since Parmesan cheese has a garlic flavor in it. One thing I love about this recipe is it is versatile and you can adjust it as you cook it to your desired liking!
It was soo yummy and my skepticism with the cream cheese was proven wrong. It definitely has the restaurant quality taste to it.
For those of you who asked, yes you can use milk instead of half and half. I used milk. It doesn't matter which milk you use, you may have to adjust your Parmesan cheese and cream cheese amount to a little more added to thicken up the sauce.
I also find using freshly shredded Parmesan cheese works a lot better than grated. It makes it for easier melting and blending the sauce together better.

This recipe was good and perfect for a weeknight dinner. Not the best homemade alfredo sauce I have ever had, but I would make it again. I too had some problems with lumps, and I tried using a whisk, but the lumps still remained. I think I went wrong by not letting the cream cheese melt enough before adding the remaining ingredients.

I am in love with this recipe! It's a great find and it will be a staple in my kitchen forever. I make it in my rice cooker on high and let it thicken while I make my chicken, broccoli, and pasta.

Variation: I substitute one 10-oz package of Philly Cooking Creme (Savory Garlic) in lieu of the plain cream cheese.
