ZUCCHINI CASSEROLE 
4 eggs, slightly beaten
1/2 c. grated Parmesan cheese
1 tsp. basil
1/2 tsp. salt
1/2 c. oil
1 c. Bisquick
3 c. unpared Zucchini, sliced very thin
1/2 c. chopped onion
1 clove garlic, minced

Place the zucchini, onion and garlic in an oblong pan, about 9"x13". Mix the first six ingredients together and add to the zucchini mixture. Bake at 350 degrees or until golden brown. (To make a quiche, cut the recipe in half and bake in a pie pan.)
