ZUCCHINI APPLE BUTTER 
4 cup Peeled Zucchini Cut into Chunks
2 Cups Sugar
1/4 cup Vinegar - Apple Cider
1 tsp. Cinnamon
1 tsp. Allspice
1 tsp. Lemon Juice
1 1/2 cup Red Hot Candies

Cook Zucchini in small amount of water. When soft, put through a blender. Add sugar, vinegar, spices, and lemon juice to zucchini. Put in a heavy saucepan and bring to boil on low heat until thicken. Add Hot Candies until melted. continue cooking until thickened, stirring constantly. Put into hot jar and seal.

An amazing way to use abundant zucchini. I shred our zucchini, instead of cubing & blending. This tastes like I used apples! I suggest that you start off adding 3/4 of a cup of red hots, then taste, it may be enough and won't be so sweet. This could also be done in a microwave.
