APPLE - ZUCCHINI CRISP 
3 med. apples, sliced
2 c. zucchini, peeled & shredded
2 tbsp. lemon juice
1/2 tsp. cinnamon
2/3 c. all-purpose flour
1/2 c. packed brown sugar
1/2 c. uncooked oatmeal
1/2 c. butter

Layer apples and zucchini in the bottom of a greased 2 quart casserole. Sprinkle with lemon juice and cinnamon. In a mixing bowl combine flour, sugar and oatmeal. Cut in butter until crumbly. Sprinkle over apples and zucchini. Bake at 375 degrees for 40 minutes. Yield 8 servings.

OMG! This is the best! After a filling supper we just wanted to "try" the crisp that just came out of the oven. We ate like pigs. The flavor and texture was wonderful. We had to share with our neighbors. This crisp is going to the Thanksgiving dinner!
