APPLE ZUCCHINI CAKE 
4 lg. eggs
1 c. vegetable oil
2 c. sugar
2 c. peeled and grated zucchini, drained
3 c. unsifted flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. baking powder
2 tsp. vanilla
1 c. chopped nuts
2 1/2 c. peeled and chopped apples

Grease and flour tube pan. Beat eggs, add oil, sugar, zucchini and vanilla. Mix well. Sift together flour, soda, baking powder, salt and spices. Add to creamed mixture. Add apples and nuts. Bake at 350 degrees for 1 hour 15 minutes.

I made this cake, using two loaf pans instead, and took one cake to the office today. Everyone loved it. The cake was easy to put together and baked up beautifully. I'm glad I made two cakes so I could have some at home...there was not one crumb left at the office. I'm adding this recipe to my "holiday gift" baking list.

Very good, made in silicone Bundt pan and baked for 1 hour 10 minutes. For spicing I used ground up allspice berries with cardamom instead of nutmeg, 1 teaspoon of that mix and 1 teaspoon of cinnamon and found that nice and subtle. Did not peel zucchini but pressed in towel, cut oil to 3/4 cup and topped up with water, 1 teaspoon of baking powder for a fuller rise.
