CHOCOLATE ZUCCHINI CAKE | |
1/2 c. soft butter 1/2 c. vegetable oil 1 3/4 c. sugar 1/2 tsp. cinnamon 4 tbsp. cocoa 1 tsp. baking soda 2 c. finely shredded zucchini 1 tsp. vanilla extract 1/2 c. sour milk 1/2 tsp. ground cloves 2 eggs 1/2 tsp. baking powder 2 1/2 c. flour 1/2 to 1 c. milk chocolate morsels Cream together butter, oil and sugar. Add eggs, vanilla and milk. Beat well. Mix in flour, cocoa, baking powder, baking soda, cinnamon and cloves. Stir in zucchini. Pour into 9 x 13-inch greased and floured pan. Sprinkle top with chocolate morsels. Bake at 325°F for 45 minutes. Very moist; needs no icing. Sprinkle with confectioners sugar if desired. |
