ZUCCHINI CAKE 
2 cups sugar
2 eggs
1 cups vegetable oil
2 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
2 cups shredded zucchini
3/4 cup shredded coconut
1/2 cup chopped nuts
1 cup milk chocolate chips.

Combine sugar, eggs, and oil in mixing bowl and beat. Sift flour, salt, soda, baking powder, and cinnamon together. Add alternately with shredded zucchini. Add coconut and chopped nuts.

Put in greased 9x13" pan and sprinkle with 1 cup chocolate chips.

Bake at 350°F for 45 minutes. Frost with:

Cream Cheese Frosting:

4 oz. cream cheese
6 tablespoons butter
2 tablespoons milk
1 teaspoon vanilla
3 cups powdered sugar

Beat together and spread over cake when cooled.

Wanted a recipe that I could bake in a 9x13 pan. Cake was light, delicious and moist. I omitted the coconut, chocolate chips and icing and added 1 teaspoon of vanilla. Cake is very sweet. Next time I make it, will decrease the sugar by about 1/3 cup to equal 1 2/3 cups sugar.
