ZUCCHINI APPLE CRISP 
5 c. peeled and seeded zucchini, sliced
1/3 to 1/2 c. sugar
1/4 c. lemon juice
1 tsp. cinnamon
3/4 c. water

TOPPING:

6 tbsp. butter
1/2 tsp. salt
1 tsp. baking powder
1 c. flour
1/2 c. brown sugar

Put zucchini, sugar, cinnamon, lemon juice, and water in a saucepan and boil for 10-15 minutes or until zucchini is done.

Place zucchini and juice in a 9 or 10 inch pie pan. Mix butter, flour, salt, brown sugar, and baking powder until crumbly. Sprinkle over the top. Bake at 350 degrees for 40-45 minutes for all pan sizes. Makes 6-8 servings.
