KRISTIN'S CUCUMBER CONFETTI
SALAD
 
A quick easy and colorful salad that even my toddler daughter loves to eat! Best of all, it's only one point on Weight Watchers! I checked! It's pretty full of vitamins A, C, and E and is practically fat free!

2 medium cucumbers, thickly sliced then quartered
1 medium yellow, red or orange pepper, chopped
1/2 large red onion or sweet Vidalia onion, finely chopped
2 medium to large tomatoes, chopped
2 tbsp. lime juice
2 tbsp. red wine vinegar
1 tsp. dill weed
salt and pepper, to taste (optional)

OPTIONAL ADD-INS:

1/2 cup finely chopped broccoli florets
1/2 cup grated carrots

After chopping vegetables to desired size pieces, dump into large mixing bowl that can be sealed with a lid. Next add lime juice, vinegar, dill, salt and pepper. Secure lid on bowl and shake, shake, shake.

Can be made the day you need it, but I prefer to make it the night before to let the vegetables soak up some the flavor!

Note: Can be kept refrigerated in a sealed container for 2 to 3 days safely.
