LEMON BARS 
Crust:

2 cups flour, sifted
1/2 cup powdered sugar, sifted
1 cup butter

Lemon Topping:

4 eggs
2 cups granulated sugar
1/3 cup lemon juice
1/4 cup flour
1/2 teaspoon baking powder

For crust, sift together 2 cups flour and powdered sugar. Cut in butter until mixture clings together. Press into 13x9x2-inch baking pan. Bake for 20-25 minutes at 350°F or until lightly browned.

For topping, beat eggs, granulated sugar an lemon juice. Sift together 1/4 cup flour and baking powder. Stir into egg mixture.

Pour over baked crust and bake for 25 minutes in a 350°F oven. Sprinkle with additional powdered sugar and cool; cut into bars.

Makes 30 bars.

I add 1/4 cup of fresh squeezed lemon instead of 1/3 because I like the lemon flavor to really snap in this dessert.
