ICED GREEN TOMATO PICKLES | |
7 lbs. sliced green tomatoes 3 c. lime 5 lbs. sugar 3 pts. of vinegar 2 gallons water 1 tsp. cloves 1 tsp. ginger 1 tsp. allspice 1 tsp. celery seed 1 tsp. mace 1 tsp. cinnamon Soak the sliced green tomatoes for 24 hours in 2 gallons of water in which 3 cups of lime has been dissolved. Drain and soak in fresh water for four (4) hours. Place in boiler, the five (5) pounds of sugar, 3 pints of vinegar and the cloves, ginger, allspice, celery seed, mace and cinnamon. Bring this syrup to boiling, pour over tomatoes and let stand overnight. In the morning, boil for an hour and seal in glass jars. NOTE: The lime makes the tomatoes crisp. The sugar, vinegar and spice mixture may be used twice. |
