GREEN TOMATO PICKLES | |
Mix solution: 2 qt. white vinegar 5 lbs. sugar 1 tsp. celery seed 1 tsp. whole cloves 1 tbsp. pickling spices 1 tbsp. salt Seven pounds of green tomatoes, cut in 1/4" rings. Make a solution of 2 gallons water and 2 cups of household common lime. Place rings in this solution and let stand 24 hours. Then remove green tomatoes and wash thoroughly until all lime is removed. Then let stand in clear, cold water 2 or 3 hours, this is very important - if it stand too long the green tomatoes will loose crispness. Boil mix solution and slide in green tomato rings. Let cook 5 minutes. Then turn off heat and let pickles stand several hours or overnight. Then place pickles on stove and cook 25 minutes. Put into jars and seal. |
