GRILLED SHRIMP WITH WINE
MARINADE
 
1/4 c. olive oil
1/4 c. dry white wine
1 tbsp. minced dry onion
1/2 tsp. dried basil (1 tsp. if fresh)
1/2 tsp. dried rosemary
1/4 tsp. pepper

Place 1 pound shelled shrimp in reclosable plastic bag, add marinade. Close bag, refrigerate 2-4 hours. Drain marinade. Thread shrimp on skewers. Grill over hot coals 8-12 minutes. Brush often with reserved marinade.

I used some old chardonnay we had on the counter, added some lemon juice to this marinade and marinated 2 pounds of jumbo, shell-on shrimp for about 30 minutes. We grilled the shrimp about 3 -4 minutes per side, until they just changed color. This was delicious; the best shrimp we have made!

If you are using RAW shrimp (even if frozen), it is not advised to use reserve marinade during cooking as a baste. Salmonella could exist from the shrimp. This can be cooked out, but if being used as a baste it may not cook long enough after the final basting.

This goes for any raw meat marinade. If you want some to baste, keep some of the marinade in reserve and do not put it in the meat.
