HERBED LEMON MARINADE | |
1/2 cup freshly squeezed lemon juice 1/2 cup dry white wine 1/2 cup olive oil 1 tablespoon chopped fresh rosemary or (1/2 teaspoon dried) 1 tablespoon chopped fresh thyme or (1/2 teaspoon dried) 1 tablespoon chopped parsley 1 teaspoon grated lemon rind 3 cloves garlic, thinly sliced salt and pepper, to taste In a glass bowl, combine lemon juice, wine, oil, rosemary, thyme, parsley, lemon rind and garlic. Season marinade with salt and pepper to taste. Marinate meats from 2 hours to overnight, depending on how much flavor is desired. Makes about 2 cups |
