POLYNESIAN PORK | |
1 1/2 lb boneless pork, cubed 1 onion, sliced 1 8 oz can pineapple chunks (with juice) 1/4 cup brown sugar 2 tbsp. cornstarch 2 tbsp. fresh lemon juice 2 tbsp. soy sauce 1 tbsp. dry sherry wine (optional) 3 cloves garlic 1/2-inch knob fresh ginger or 1/8 tsp. ground ginger 1 medium green pepper coarsely chopped 1 6-10 pkg. snow pea pods (frozen) Put all ingredients except pork, pineapple cubes, snow peas, two garlic cloves and green pepper into a food processor or blender and blend til smooth. Add the green pepper, and pulse once or twice until 1/2 inch chunks of pepper remain. In a tablespoon of olive oil, sauté pork cubes on medium high heat til browned on outside; add 2 garlic cloves, minced. Reduce heat. Transfer the blended sauce/liquid mixture to skillet and simmer until pork is tender and almost done (about 20 minutes). Add pea pods and cook until tender (about 15 minutes). Serve.
