POUND CAKE LOAF | |
1 1/4 cups sifted all-purpose flour 1/2 tsp. baking powder 1/4 tsp. salt 3/4 cup (1 1/2 sticks) butter (at room temperature) 3/4 cup sugar 1/2 tsp. grated lemon peel 3 eggs 1 tsp. vanilla Preheat oven to 350°F. Grease the bottom (not sides) of a 9x5x3-inch pan. Sift or whisk together flour, baking powder and salt. Beat butter until creamy; gradually add sugar and lemon peel. Continue to beat until very light and fluffy (about 6 minutes on medium speed). Add eggs, one at a time, beating after each egg is added; stir in vanilla. Spread batter evenly in prepared loaf pan. Bake in preheated 350°F oven for 50 minutes or until a wooden pick inserted in center of cake comes out clean. Brush top of cake with melted butter while still warm. Cool in pan. Sift confectioners’ sugar lightly on top or drizzle with confectioners icing. Variation: Lemon Pound Cake - substitute pure lemon extract and drizzle top of cake with confectioners' icing made with lemon juice and a few drops of lemon extract.
