BOILED PEANUTS 
Bring a large pot (about 7 quarts) of water to a boil. Pour in 1/4 cup of salt (canning or kosher salt is less expensive).

Drop peanuts in to boil; put plate on top of peanuts. Fill a jar with water and set on top of plate to keep peanuts under the water.

Cook over high heat until peanuts begin to boil. Turn off heat.

Allow to cool.

When cool, bring to a boil again and cook for about 15 minutes.
