ARABY SPICE CAKE | |
3/4 c. shortening 1 1/2 c. sugar 3 eggs 3/4 c. sour milk 2 c. sifted flour 3/4 tsp. baking soda 1 tsp. salt 3/4 tsp. baking powder 3/4 tsp. nutmeg 1 tsp. cinnamon 2 tbsp. powdered cocoa 1 tsp. vanilla 1/2 tsp. lemon 1 c. nut meats Cream shortening and sugar. Add eggs. Mix dry ingredients together. Add alternately with sour milk to shortening mixture. When above are mixed together, add vanilla and lemon extract. Fold in nut meats. Bake in 350 degree oven until center tests done with a toothpick. CARAMEL NUT ICING: 2 egg whites 2 1/2 c. brown sugar 5 tbsp. water 1 tsp. vanilla 1 c. chopped walnuts Put egg whites, sugar and water in top of double boiler. Place over rapidly boiling water. Beat constantly with rotary beater and cook 7 minutes, or until frosting will stand in peaks. Add vanilla after removing from fire and beat until thick enough to spread. Sprinkle nuts over frosting before it becomes firm. This was my Grandmother Spicer's recipe and it is probably over 60 years old. She never cooked on anything but a wood stove. |
