PUMPKIN COCONUT CREAM CHEESE
CAKE
 
2 c. sugar
4 eggs, beaten
1 tsp. salt
1 tsp. baking powder
2 tsp. pumpkin pie spice
1/2 c. flaked coconut
1 1/4 c. salad oil
2 c. pumpkin, cooked
1 tsp. baking soda
2 c. flour
1/2 c. nuts, chopped

Beat together sugar and oil. Mix in eggs and pumpkin. Stir in dry ingredients. Add nuts and coconut. Pour into greased 9 x 13 inch pan. Bake at 350 degrees for 25 to 30 minutes, or until tests done. Cool. Frost with cream cheese icing.

ICING:

1/2 stick butter
1 box powdered sugar
1/2 c. nuts, chopped
1 (8 oz.) pkg. cream cheese
1/2 c. coconut

Cream butter and cheese. Gradually add sugar. Stir in nuts and coconut. Spread evenly over cake.
