HASH BROWN POTATO CASSEROLE 
1 (2 lb.) bag frozen hash brown potatoes
2 (8 oz. ea.) cartons sour cream
1/2 cup chopped onions
1 (10 3/4 oz.) can cream of chicken soup
2 cups shredded cheese, cheddar, sharp or other
2 cups corn flake crumbs
1/4 cup (1/2 stick) butter, melted

Thaw potatoes, combine soup, sour cream, onion and cheese; mix in potatoes. Spray 3-quart casserole with Pam, put in mixture. Mix melted butter and crumbs and sprinkle on top.

Have oven preheated to 350°F. and bake 1 hour.

Above recipe is wonderful. I've made it for potlucks for years and never have a drop left. I use ritz cracker crumbs for the topping instead of the corn flake crumbs.

I've made this recipe several times. It is always a hit at holiday time and great for a side dish for everyday meals. It is always a hit when I make it. It's one of the most requested dishes I make.

I've seen a dozen or so hash brown casserole recipes on this site similar to this one. I see the appeal of this recipe; I tried it myself. It sounds great to buy a bag of frozen potatoes and use ingredients you probably have on hand to make this dish. The problem it that if I'm going to use sour cream and cheese and canned soup (in other words, tons of fat and calories), I'd better LOVE the outcome and frankly I just didn't. I still tasted the frozen potatoes, which have nowhere near the flavor of fresh. Folks, use real potatoes and make an au gratin dish from a good cook book. Fresh potatoes, onions, cheese, milk and seaonsing - Fantastic.

Always an excellent recipe. I have been topping with Panko bread crumbs mixed with a little Parmesan cheese. Just a little different taste.
