HASH BROWN SOUR CREAM POTATO
CASSEROLE
 
1 (2 lb.) pkg. frozen hash browns
1/2 c. butter
1/4 tsp. pepper
2 c. sour cream
1 tsp. salt
1/2 c. chopped onion
1/2 c. chopped green pepper
10 ounce can cream of chicken soup
2 c. grated cheddar cheese
2 c. crushed cornflakes
1/3 c. melted butter

Thaw potatoes. Combine with butter, salt, pepper, onion, green pepper, sour cream soup and cheese. Blend together with the potatoes and put in 9 x 13 pan. Mix the cornflakes and melted butter together and sprinkle over potato mixture. Sprinkle top with paprika.

Bake at 350°F for 45 to 50 minutes. This can be baked and frozen, then reheated to serve.

Yummy recipe! I would do 2 sticks of butter next time, not 2 cups (4 sticks). The butter was oozing.

I added a little Mrs. Dash and 2 tsp. minced garlic. For the topping, I used crushed potato chips (cheesy garlic bread flavor) and no butter. It turned out great and I am on my second helping.

I made this recipe yesterday for adult grandkids. It was a hit with all of them. I did make a couple of adjustments. I used 1 cup of cheese in the potatoes, saved the second cup and used it for the top of the potatoes. I didn't use Cornflakes. I used 1/2 lb of bacon fried it crisp and sprinkled it on top of the 2 cup of cheese I reserved. It was so good. It was like mashed potatoes though, the next time I make it, I will not thaw the potatoes, may take longer to bake but will be more like a hashbrown. I will make them again. They seemed, very oily or buttery when they came out of the oven, after setting for a few minutes that went away. I think it was from the cheese.
