BUTTERSCOTCH DESSERT COOKIES | |
A Cake-like Cookie. 1/2 cup (1 stick) butter 1 1/2 cups packed brown sugar 2 eggs 1 tsp. vanilla 2 1/2 cups sifted all-purpose flour 1/2 tsp. salt 1/2 tsp. baking powder 1 tsp. baking soda 1 cup dairy sour cream 3/4 cup chopped nuts Preheat oven to 400°F. Cream together butter and sugar. Add eggs and vanilla. Beat until light and fluffy. Sift together flour, salt, baking powder and baking soda. Add dry ingredients with dairy sour cream to butter and sugar mixture. Mix until all ingredients are thoroughly combined. Stir in nuts. Chill. Drop by tablespoonfuls onto a baking sheet about 2-inches apart. Flatten slightly with back of spoon. Bake at 400°F for 10 to 12 minutes. Cool. Frost with Brown Butter Frosting. BROWN BUTTER FROSTING: 6 tbsp. butter 3 cups sifted confectioners' sugar 1 tsp. vanilla 1/4 cup hot water Brown butter over low heat. Add remaining ingredients and beat together. Makes 3 dozen cookies. |
