“BUTTERSCOTCH MERINGUE BARS” IS IN:

BUTTERSCOTCH MERINGUE BARS 
A Chewy Bar Topped with Meringue

1/4 cup shortening (Crisco)
1 1/2 cups sifted all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 1/2 cups packed brown sugar, divided
2 eggs, separated
1 cup chopped nuts
1 tsp. vanilla

Preheat oven to 325°F.

Combine flour, baking powder, salt and 1/2 cup sugar. Cut in shortening. Add egg yolks and mix until crumbly. Pack into a greased 11x7-inch pan.

Beat egg whites until stiff; add remaining 1 cup brown sugar slowly. Blend thoroughly, then add nuts and vanilla. Spread on top of crumb mixture.

Bake in a 325°F oven for 30 minutes. Cut into bars.

Makes 2 dozen bars.
